That’s why we love classic recipes that help us create beautiful drinks and desserts to enjoy “just because” or with our families during those beloved summer evening get-togethers.Even good food can remind us of our worth and of the beauty of life. Food is a gift that not only sustains us, but also brings us together and helps us enjoy the presence of those we love.

Now, is there anything more reminiscent of summer and all its warmth, beauty, and life than fresh limes? We don’t think so. Below are two classic recipes to bring the vibrant flavor of fresh limes to your kitchen this summer!

CLASSIC MINT MOJITO

The first is a fresh twist on an old favorite, a Classic Mint Mojito. This is a great way to use some of the fresh mint growing on your patio this summer. This recipe is flexible so you can decide how much alcohol and sugar you want in each drink, or replace with pure agave or honey for a more unique, organic flavor — reduce or increase the white rum and sugar as you desire!

For your younger family members, you could even make this sans alcohol for a still-refreshing and cool summer drink. This recipe makes 1 serving.

1. Combine the mint leaves, rum, sugar, and lime juice in a cocktail shaker. Muddle the mint leaves for a few minutes to release the minty flavor. (To muddle, use a cocktail muddler or the end of a wooden spoon to gently mash the leaves against the bottom and sides of the cocktail shaker. Do this gently – don’t crush the leaves into small pieces!)

2. Add 1 cup of ice and shake for 20-30 seconds.

3. Strain the mixture into a clean glass. Add the desired amount of fresh ice and sparkling water. Stir lightly and add a lime slice or sprig of mint to garnish.

KEY LIME CHEESECAKE

Summer family gatherings always seem to require “bringing a dish.” This no-oven-required Key Lime Cheesecake is the perfect option. Who wants to crank up the oven when it’s hot outside, anyway? This recipe is the ideal warm-weather dessert; just be sure to allow enough time for it to cool in the freezer and fridge for optimal enjoyment. We suggest prepping the night before.

Take note that this recipe calls for key limes, which are smaller, more flavorful, and more aromatic than regular limes. They may be a little more challenging to find in stores, but opting for fresh-squeezed key limes will be worth the flavor!

1. Combine graham cracker crumbs, sugar, and salt.

2. Fold in melted butter until mixture is well-combined and sticks together.

3. Press the mixture into the bottom of a 9-inch pain. Freeze for 15 minutes until firm.

4. In a separate bowl, preferably with an electric mixer, mix the cream cheese and condensed milk for 3-5 minutes until fluffy. Add lime juice, zest, and vanilla. Mix well.

5. In another bowl, mix the heavy cream until it forms stiff peaks. Add this slowly to the cream-cheese mixture. Pour this into the pan with the crust. Cover and refrigerate for 12 hours to 3 days.

6. When ready to serve, add lime slices and fresh whipped cream as toppings.

Dig in!
